Drawing both locals and foodie travellers from around the world, Ibu Oka is the authentic Balinese warung that has shot to stardom thanks to its one-and-only dish — traditional Balinese babi guling (suckling pig). Despite gracing almost every Bali guidebook and foodie forum, Ibu Oka has managed to maintain the Balinese authenticity that first charmed the palates of its local and international aficionados, changing only to a larger location to meet the demand for this juicy delicacy. Whole pigs are rubbed and stuffed with Balinese spices; fragrant seeds, spices, roots and shoots, including shallots, garlic, ginger, turmeric, galangal, chilies and lemongrass to name just a few. The flavour-infused pigs are then cooked on a turning spit for up to eight hours.

The result? The most succulent and tender slices of pork that ooze with aromatic Balinese juices. The rest of the pig is also put to delicious use, from the sweet and crunchy crackling to the deep-fried skin and pork sausage, placed around a generous serving of coconut-infused rice.
