As fun and funky as the restaurant itself, the Baked Lime Tart at Big Fish Bar & Grill brings together the signature characteristics of a true baked tart, then peps it all up with some piquant lime flavours. And considering the restaurant is the poolside eatery at The Stones Hotel, these piquant notes are very much appreciated. Served on a rustic-style wooden board, the tart comes nestled in a crumpled sheet of baking paper. The tart acts as a neat little bed for a smooth, yoghurt-flavoured sorbet, which as you crack open the tart’s firm but crumbly shell, the cool scoop melts into a soft custard filling. The custard is infused with sweet yet sour kaffir limes, making each spoonful that little bit lighter and nicely zested. To finish, a pistachio praline crumble is sprinkled on the top, while a cute miniature jug holds a refreshing lime granita to further freshen up each bite.
