Four of Indonesia’s hottest young chefs compete to create the sweetest treat

KU DE TA’s exciting new restaurant, Mejekawi, not only offers some of Bali’s most innovative degustation menus, it also houses a high-tech test kitchen filled with the latest in gastronomic gadgetry. This culinary playground was put to good use recently when it hosted a culinary competition pitting some of Indonesia’s hottest young pastry chefs against each other to decide whose dessert creations were the most divine.

Mejekawi’s Inaugural Plated Dessert Competition, which took place on Nov. 19, pitted four talented chefs from Bali and Jakarta against one another in a friendly battle to see whose sweets reigned supreme. The four competitors were Ririn Dwi Astutik, Junior Cook at Metis, I Komang Sudiana Yasa, pastry chef at Alila Villas Uluwatu, Ni Made Rusmana Dewi, chef at KU DE TA and Mejekawi, and Adithya Pratama, brand manager for Dapur Cokelat in Jakarta.

The theme for the dessert competition was “Island of The Gods.” Contestants were required to include one recipe component prepared using the Trittico Executive gelato maker manufactured by Bravo, a partner in the competition. They were also required to use ingredients provided by Mejekawi’s other partners in the competition: Valrhona Chocolate, Capfruit puree and DGF glazing/icing from Classic Fine Foods,  as well as ultra-premium Ron Zacapa rum.

The chefs were given three hours to prepare the components of their intricate dishes and one hour to plate them for presentation to the judging panel. The three judges for the competition were Giuliano Carpene from Bravo Asia, Tipi Jabrik, world-class surfer and owner of Mantra, and Kevin Abramowicz, General Manager of The Legian Bali. Mejekawi’s Research and Development Chef Will Goldfarb, one of America’s finest pastry chefs, presided over the competition and gave advice and encouragement to the young chefs.

Each of the competitors put up spectacular desserts in a wide range of styles, but in the end it was Ririn Dwi Asutik  who took the first place award.
