Henry Alexie Bloem Appointed Advisor at Alaya Resort Ubud

Esteemed Indonesian chef Henry Alexie Bloem has recently been appointed food and beverage advisor for Alaya Hotels & Resorts Bali. Bloem is well-known for his penchant for fresh ingredients and passion to preserve Indonesian flavours and has held senior positions in numerous hotels and resorts in Indonesia. He further gained much culinary experience from his travels through Singapore, Malaysia, Australia, Spain, America and the Philippines. Bloem’s repertoire led to him being appointed president of the Indonesian Chef Association, a position he will hold from 2008 until 2022 and in which he serves as an honorary ambassador for Indonesian cuisine.

Bloem is working closely with Alaya Hotels & Resorts Bali’s Executive Chef Siharta and Beverage Manager Krisna Decaran to revamp the menus and further develop the kitchen team at Alaya Resort Ubud. Diners can expect the diverse cuisine of the archipelago at the hotel’s Manisan restaurant, and western and Asian fare with an east-meets-west concept at Petani. Bloem’s new signature dish at Manisan is nasi bira, a kemangi leaf-infused yellow rice dish with dry salted fish, cucumber and eggplant. On the side are spicy honey grilled prawns, seared tuna sambal matah, chicken betutu and more.

“The unique and modern artistic concept of Alaya Resort Ubud is my biggest source of inspiration to create a new menu that defines the gastronomy of Indonesian fine dining at our extraordinary restaurants,” Bloem said. “My vision is to give guests exceptional dining experiences by introducing flavours that truly satisfy the taste buds and are remembered long after they return home.”
