Bali’s gourmands were delighted to indulge their palates for refined food at W Bali – Seminyak’s FIRE recently, with an intimate dinner with renowned Chef Rolf Fliegauf. Visiting from Switzerland, Chef Rolf is one of the country’s most decorated chefs, awarded two stars in the Michelin Guide for both his Ecco Ascona and St. Moritz restaurants.
The sophisticated six-course Bali dinner, offered on 1st and 2nd November, showcased Chef Rolf’s outstanding skills and love of his craft. The innovative menu opened with an amuse bouche trio of Flores oyster with green apple and ponzu, crunchy chicken skin cracker with foie gras and chives, and a refreshing scallop with lime and herbs, and continued with Kiwami wagyu beef, wild broccoli and hazelnut and a delightful Swiss birchermusli, yoghurt and sorrel, among other temptations.
