E: What are your responsibilities?
K: The standard response would be cost, guest satisfaction and revenue, but for me the biggest responsibility is creating dreams every day and making sure they come true.
E: What makes a typical day?
K: Starting the day at 6am by checking breakfast, all the emails, F&B reports, reading guest comments made the previous evening and TripAdvisor, as well check for any postings on social media – that’s mainly the morning briefing preparations. The rest of the day is the fun part; meeting and greeting a lot of guests, food tastings and experimenting with new dishes with the chef, discussing upcoming promotions, going over marketing materials, and when everyone goes home, I return to my office, turn on some music and check any emails, plus do the daily administration in a perfectly peaceful office.
E: Your best attribute?
K: Too positive, even if that is impossible!
E: Team player or team leader?
K: In every team there is a leader, if I was not the leader in my team, then I wouldn’t be the assistant director of F&B.
E: Who has been the most influential figure in your career to date?
K: My current general manager, Terence Lee; he’s very demanding and accepts nothing but 101 percent from me, but he’s fair, sarcastic and always positive. His motto, “Nothing is impossible, never give up and believe in your dreams,” is something he always reminds us to implement so that we can make the impossible possible.
E: Name one really special thing about your hotel?
K: We are a family, the team is a family, and it shows in the food that we are serving; comfort, simple food, like something from your mother’s kitchen.
E: How do you unwind?
E: Dead or alive, who would you like to take out to dinner?
K: My mom, she’s my hero.
