Kintamani Pork Press & Indian Ocean Octopus

Award-winning Mozaic, long famed for its exquisite haute cuisine dinners, is now offering diners the opportunity to indulge in a fascinating interactive lunchtime experience.

Set within the rambling grounds of the famed Mozaic gastronomic restaurant, beloved by gourmands for over 17 years, is an elegant dining room that seats just 20 and is also home to a vibrant red and stainless-steel high-end kitchen. This sparkling showcase is where Mozaic’s talented chefs create culinary lunchtime masterpieces to wow diners keen to pamper their palates with the restaurant’s innovative dishes.

The lunch menus at Mozaic are as elegant and imaginative as the evening menus, changing depending on the season and availability of produce and offering five or seven courses, with or without wine pairing; vegetarians and those with dietary restrictions can also be accommodated. The talented kitchen team uses local ingredients to surprise guests’ taste buds, transforming foie gras with tart belimbing wuluh, beautifying a subtle langoustine dish with pale pink, aromatic torch ginger, and giving rich lamb the addition of punchy black kluwek.

These gastronomic treats are created by marrying local ingredients with refined international preparation and artful presentation to satisfy both the eye and tantalise the taste buds with flavours that dazzle the palate.

The lunchtime Mozaic experience is one of interaction, a rare opportunity to watch the quiet dedication of masters at work, to watch something being created and to have the immediate satisfaction of devouring that creation and being able to discuss it with its creator; one where the attractive rice paddy view outside the window often loses out to fascination with the kitchen.

A platter of some of the Indonesian herbs, spices and produce is placed on each of the beautifully set dining tables, allowing the chefs and waitstaff to show guests some of the unusual ingredients as they introduce each dish. Following this discovery theme, guests are welcome to watch the chefs at work in the kitchen and to talk with them about what they are doing and witness the art and meticulous care that goes into the creation of each dish.

The meal opens with amuse bouches such as the warm cheese puffs with truffle cream, and continues with pleasures like gindara fish carpaccio smoked à la minute with fresh cumin leaf; coral trout en papillote with spiced aromatic broth and sweet potato; to Kintamani pork press and Indian Ocean octopus with kaffir lime gel, jambu air and compressed apple. Both regular and premium wine pairings are offered from the awarded wine list, which is regularly updated and selected to perfectly match each dish.

With impeccable service added to the riches of a Mozaic dining experience, the new lunch opening hours are sure to attract discerning gourmands keen to explore Indonesia’s aromatic flavours while partaking of an exquisite meal. Mozaic is open for lunch from 12 noon until 2pm, Thursdays to Sundays. Reservations are recommended.
