E: Describe your typical day in a sentence.

Shane: Work starts at 8am. It’s generally busy all day and time passes so quickly, I usually walk into my home at around 8.30pm.

E: So how did you come to be the Director of F&B for The Langham, Hong Kong?

S: I was recommended by a friend to the general manager at the time, and with my extensive international culinary and food and beverage experience, I was considered a suitable applicant for the role. I continue to strive in this environment.

E: What’s the toughest part of your job?

S: Staying away from the ice cream freezer!

E: And what makes you smile at work?

S: Compliments from guests for the personalised and professional service.

E: What motivates you?    

S: The ability to be better at what I do every day.

E: Would things fall apart if you weren’t around?

S: No. The structure in the Food & Beverage Department and the team are professional and attentive, and my executive assistant Joey wouldn’t let it happen.

E: Who in your team deserves more recognition and why?

S: No individual, it’s a team effort at The Langham, Hong Kong.

E: Why should people choose The Langham, Hong Kong to dine? 

S: The professionalism of our team, the quality of our produce, and our warm genuine service.

E: Away from work, what’s your favourite place to eat?

S: At my friend Chris’ place, he does a fantastic Malay styled curry, roast lamb with Yorkshire pudding and all the trimmings, as well as some wonderful desserts.

E: How do you unwind?

S: A bottle of good red wine, a couch and Netflix.

E: Finally, any advice for those looking to break into the industry?

S: Follow your passion, dare to travel the world, keep smiling.
