Gently braised in a flavoursome stock before being bathed in a sticky, sweet and spicy soy sauce that has a hint of sesame oil and garlic, the meat is tender on the inside and crispy on the outside. Topped with a cucumber salsa for a refreshing, crunchy contrast and served alongside a smooth comforting onion purée, this indulgent meal draws us back again and again.
