Marriott Bonvoy Presents Loka Rasa: a Culinary Odyssey Through Indonesia’s Rich Flavours

A celebration of Indonesia’s diverse culinary heritage is held from 10 November to 17 December 2023 in all Marriott Bonvoy restaurants nationwide.

Loka Rasa will showcase eight iconic Indonesian dishes, reimagined by four top Indonesian culinary master chefs. In honour of National Heroes’ Day, it promises a journey into the soul of Nusantara, offering modernised interpretations of beloved national treasures.

Chef Bayu Retno Timur of Mandapa, a Ritz-Carlton Reserve introduces Tuna Sambal Kecombrang, a delicate fusion of yellowfin tuna, long beans, ginger torch flower, shallot, chilli and fresh kemangi. His creation of Rawon Sapi features 48-hour slow-cooked wagyu beef short ribs, complemented by salted egg, tomatoes, beansprouts and a rich keluwek broth.

Renaissance Bali Uluwatu Resort & Spa’s Chef I Made Wisnu Adiyatma showcases Kambing Panggang Basa Lalah Manis, a tantalising grilled marinated lamb cutlet with palm sugar and chilli, paired with eggplant and coconut celengis cream. In his rendition of Be Pasih Menyatnyat, fish skin chips and ginger-scented steamed rice are served alongside poached red snapper that is brought to life in a ginger torch curry sauce.

Her must-try is the red mullet Kuah Asam Manis, blending crab mousse bumbu kuning, fresh basil, tomato water and fragrant lemongrass oil.
