Executive has just launched a new menu, East Meets West, at the Garden Grille Restaurant at Hilton Garden Inn Bali Ngurah Rai Airport. With a highly diverse clientele, ranging from government officials to the island’s tourists, and his desire to introduce classic Indonesian dishes and showcase the country’s fresh ingredients, the new dishes include a classic Balinese crispy duck marinated in the full range of Balinese spices served with pandan rice, a hearty veal shank ossobuco and the chef’s special Torta de La Nonna, a warm chocolate brownie with cashew nuts, hints of orange, mango coulis and vanilla ice cream, the recipe for which has been passed down through the generations and was shared with him by an Italian friend.

Knowing that his food is often the very first or last impression of Bali that guests take with them, he ensures that everything is made with great care and respect, to the highest standards. Chef Jaka is also keen to share his extensive knowledge of cooking with his kitchen team, teaching them the basics, from filleting meat and fish to dicing the perfect mirepoix, meaning everything is made fresh, from scratch, ensuring guests have a great dining experience and the team has a strong foundation on which to build their culinary dreams. His hard work has paid off with his kitchen team winning awards within Hilton in Southeast Asia, as well as at this year’s Salon Culinaire competition held in Bali.
