The ever-popular rooftop bar and restaurant Above Eleven Bali proudly introduces Peruvian Eduardo Montes as its new head chef. Located atop Samasta Lifestyle village just off Jimbaran Bay, Above Eleven Bali has a reputation for its relaxed style, creative drinks and Peruvian-Japanese, or Nikkei cuisine, a specialty of Eduardo Montes who boasts a CV working with some of the best Peruvian chefs in the world.
Eduardo brings with him more than 15 years of culinary expertise gained from working in various restaurants worldwide, including Dubai, Hong Kong, Italy and Peru and, at Above Eleven Bali, he offers some of the finest Nikkei cuisine on the island. Created using the best of local Balinese ingredients, favourites include prawn causa, black ink squid causa and tuna ceviche created using fresh produce from Jimbaran’s famous fish market.
Chef Eduardo Montes invites guests to enjoy high quality Peruvian-Japanese cuisine in a fabulous rooftop setting at Above Eleven Bali. Guests can explore the extensive range of a la carte dishes or choose the Discover Peru tasting menu, available daily from 4pm until 11.30pm.
