In line with Japanese beliefs, the food at Edogin satisfies all of the five senses thanks to the sounds of sizzling, spitting woks that send the distinct aromas of Japanese cuisine drifting throughout the dining room. The food is fresh and healthy, prepared with great care and presented with an equal amount of intricacy. Simple yet luxurious flavours epitomise true Japanese cuisine, resulting in beautifully crafted delicacies and mouthwatering a la minute creations. But the main highlight at Edogin is the recreation and revitalisation of a true Japanese favourite; Saikyo Yaki (baked cod marinated with miso). At Edogin, the dish is prepared in the traditional way (baked with the signature sweet miso marinade), yet the innovative chefs add additional elements to make Edogin’s version a unique example of this delicious recipe.

For example, the chefs choose to use black cod for its moist and flaky texture. Even when it is exposed to high temperatures during searing, the fish is able to retain its moisture, making for a deliciously cooked fillet that crumbles with juiciness. The flaky texture also helps the miso marinade to sear into the flesh, locking in the natural sweetness of the miso paste. In addition to enhancing the rich flavours and succulent textures, black cod is also a much healthier option because it is low in calories and an excellent source of high-quality proteins and essential nutrients. Black cod can contain up to 50% more of the celebrated Omega-3 oil than the more commonly hyped Omega-3 source, Pacific Salmon, resulting in a delicious dish that you needn’t feel guilty for enjoying.
