Hotel Indigo Bali Seminyak Beach is back with another Purnama collaboration dinner this February, after its success last year. The dining programme will be held on 20th February at the hotel’s flagship dining destination, Salon Bali, showcasing a collaborative effort between Hotel Indigo Bali Seminyak Beach’s Executive Chef Nic Philip and Chef Drew Nocente from the famous Salted & Hung in Singapore.
Drew is no stranger to the kitchen world having started his career at the age of 15 when he worked as a kitchen assistant. He got to the sous chef position at 22 years old, and at 24 was appointed head chef of banqueting at Hilton in Perth. His impressive stints in the past include working as a sous chef in the famed Maze Grill in London, under the guidance of Gordon Ramsey’s protégé Jason Atherton.
The years of experience, especially in charcuterie and grill, his penchant for experimentation and outstanding skills in both traditional and urban culinary scenes, has seen Drew create a meticulously crafted and unique menu focusing on meat curing at Salted & Hung.
Add to that Nic’s notable culinary repertoire, which includes Michelin-starred Cove Club in London and acclaimed Restaurant Taller in Copenhagen, you’ll get an evening to remember.
