ICHU brings the effervescent flavours of Peru to the dynamic dining scene in Hong Kong.
Just last year, Hong Kong’s vibrant dining scene welcomed a brilliant and bold addition in the form of ICHU Peru. Located in the city’s art and lifestyle hub, H Queen’s, ICHU Peru is the brainchild of highly talented and respected chef Virgilio Martinez Véliz and Dubai-based hospitality company Bulldozer Group. Virgilio is famed for being the brains behind award-winning Central restaurant in Lima, Peru.
Bringing his true roots with him, Virgilio wants to recreate an ambience reminiscent of Lima’s local cevicherias in the heart of Hong Kong, serving contemporary Peruvian cuisine in a contemporary, bistro-style setting. The atmosphere is casual, but the menu at ICHU Peru boasts Virgilio’s sophisticated knowledge of Peruvian cuisine.
“We want to honour Peru’s no-fuss dining culture, where the atmosphere is relaxed, the dishes are shared and the recipes highlight fresh ingredients and traditional flavours,” mused Virgilio.
Virgilio even relocated trusted Chef Sang Jeong from his Central team to oversee ICHU Peru in Hong Kong and ensure authentic flavours. Sang is Korean-born and has worked with Virgilio at Central for more than three years and collaborated on many of the restaurant’s signature dishes.
Must-try dishes include pargo al rocoto – thinly-sliced snapper with celeriac, avocado and aji rocoto and ceviche clasico – snapper, choclo, red onion and sweet potato for appetisers. Don’t miss out on the palta quemada – charred avocado, aji limo, tomato and cassava, and signature tartar de lomo con maiz with premium wagyu beef striploin. The pez Amazonia is also divine, the sea bass is infused with the smoky aroma of ashed leaves.
The team is complete with mixologist Massimo Petovello, who crafted ICHU’s drinks, which pair perfectly with the unique Peruvian flavours. Staying true to the Latin American theme of the menu, the drink selection includes a wide range of premium spirits and wines from South American vineyards.
The cocktail menu is divided into four sections, inspired by the varying landscapes of Peru: La Sierra, Costa de Mar, Amazonia and Costa del Desierto, and includes signatures like the Ichu Pisco Sour with saffron and eucalyptus and El Milagro with mescal, amaretto orgeat, amontillado and purple popcorn.
In addition to the inspired food and drinks menus, ICHU also features a stylish and comfortable setting that complements the whole dining experience. Designed by award-winning Joyce Wang, the restaurant mimics Peru’s varying altitudes, comprising distinctive sections. Look beyond the main show that is the open kitchen and dining room, and find a separate bar and a spacious outdoor terrace overlooking Pottinger and Stanley Streets.
