Gaddi’s at The Peninsula Hong Kong has appointed Chef Anne-Sophie Nicolas as its first female Chef de Cuisine in the restaurant’s 70-year history. A rising star in the culinary world, Chef Nicolas has honed her skills at Michelin-starred establishments, including Espadon at The Ritz Paris and L’Atelier de Joël Robuchon in Hong Kong, where she led the team to create exceptional dining experiences.

At Gaddi’s, Chef Nicolas introduces a refined menu that blends French classics with innovative twists. Highlights include the king crab tart with Provencal heirloom tomatoes and sherry vinegar sauce, and pan-seared Norwegian langoustine with Perseus N°2 superior Oscietra caviar, zucchini, and bisque. For mains, her crispy scales amadai with vegetables medley and saffron mayonnaise and French suckling pig in various ways showcase her meticulous attention to flavour and presentation.

Chef Nicolas collaborates closely with Gaddi’s team, including Restaurant Manager Mathieu De Matteis and Chef Sommelier Marc Le Gallic, whose wine list features over 700 labels, including one of the rarest labels, Vosne Romanée 1953.
