Led by Chef Eka Sunarya, Kubu offers sustainable dishes that celebrate the island’s rich biodiversity while embracing zero-waste principles.

Nestled amidst Bali’s lush highlands, Kubu at Mandapa unveils a reimagined dining experience that marries sustainable gastronomy with culinary artistry. Named after the Balinese word for “hut,” Kubu embodies humble roots and a deep commitment to sustainability, sourcing ingredients by place-based community and embracing zero-waste principles.

Led by Executive Sous Chef Eka Sunarya, the menu draws inspiration from Bali’s rich biodiversity, showcasing ingredients sourced from within 100kilometres of the restaurant to ensure its freshness and honoring each component from root to leaf.

Chef Eka’s passion transforms these elements into refined creations. Signature dishes like the Tabanan Braised Beans, a celebration of Bali’s native 16 varieties of beans, creatively presented on a traditional-Congklak-inspired-plate; and the “Bali Heritage Pig” dish, featuring slow-cooked black-pork belly, blends rustic flavours with modern European finesse, creating a truly succulent, melt-in-your-mouth meat texture, with more gamey flavour and sweeter taste compared to standard pork.

Chef Eka also use rare ingredients, such as wild herbs, exotic fruits and unique vegetable varietals on his dishes, promoting the island’s rich biodiversity. Kubu’s commitment to sustainability extends beyond the kitchen as well, with every ingredient thoughtfully repurposed – from vegetable scraps turned into broths, to seafood shells used as serving vessels.

Kubu’s beverage program mirrors this philosophy, featuring craft cocktails made with local spirits and foraged botanicals, along with non-alcoholic options that highlight Bali’s tropical fruits and herbs.

Apart from the dining experience, Kubu also invites guests into its sustainable world as an educational platform, offering tours of the on-site gardens, cooking workshops and events that celebrate responsible food production and modern gastronomy.
