Marking its second anniversary, Ikan Restaurant at The Westin Resort Nusa Dua Bali introduces a refreshed menu that reimagines Indonesian coastal cuisine. Drawing inspiration from fire, smoke, modern techniques, coastal heritage and sustainability, the new offerings highlight the rich culinary traditions of the archipelago while embracing contemporary influences.
Situated along the shores of Nusa Dua, this must-visit dining destination has built a reputation for honouring Indonesia’s diverse food culture. The latest menu evolution goes beyond classic interpretations, presenting an engaging dining experience through bold flavours, locally sourced ingredients and innovative cooking methods.
Under the direction of Chef Mohamad Raviel Sidik, the new menu reflects Indonesia’s rich gastronomic landscape. Hailing from Bandung, Chef Raviel infuses his creations with the vibrancy of street food traditions while incorporating the refined techniques he has mastered throughout his career. With guidance from Michelin-experienced Amaury Belkhanfar and Indonesian culinary expert Lucky Dailah of Locavore, his approach combines authenticity with modern craftsmanship.
Developing this menu has been an exciting journey, said Chef Raviel. He and his team have blended the essence of fire and smoke with coastal influences to bring a fresh perspective to Indonesian cuisine. Using locally sourced ingredients and innovative techniques, they aim to present familiar flavours in a new light.
The menu introduces an array of new dishes designed to take diners on a culinary exploration of Indonesia. Nusantara Bites features small plates such as Lawa Bale, a white snapper dish with green chilli and coconut dressing, and Lampung beef tartare with sambal ijo and salted egg yolk. broth & spice brings comforting flavours with signature soups like Bogor Laksa and Soto Ayam, which showcase Indonesia’s time-honoured culinary traditions.
Daging Nusantara highlights premium meat selections, including Babi Guling, Balinese spiced porchetta and Tongseng lamb, a spiced lamb chop prepared with a balance of classic spices and modern techniques. For dessert, Sweet Traditions offers contemporary takes on Indonesian classics, including Klepon Cake and Molten Bali Chocolate Volcano.
