In a delightful collaboration with Bali Asli Restaurant, COMO Uma Canggu invites guests to embark on a culinary journey celebrating the rich heritage of East Bali through an authentic Megibung feast, marking the grand finale of its 2025 COMO Culinary Odyssey.
From 14 August to 30 September 2025, the Karangasem Edition offers a unique opportunity to immerse yourself in the vibrant flavours, stories and culture of East Bali, showcasing the ceremonial dining tradition of Megibung. This time-honoured practice originated in the royal courts of Karangasem, designed to foster connections within the community through the shared experience of food.
Curated by Bali Asli’s visionary founder and Executive Chef Penelope Jane Williams, the menu pays homage to the region’s rich history and local produce. Each dish is crafted using traditional techniques and fresh, locally sourced ingredients. Highlights include bamboo-steamed Sidemen red rice, fragrant jackfruit curry and barbecued coconut curd. Notable dishes feature Be Siap Mepanggang, succulent baby Balinese chicken marinated in a blend of traditional spices and grilled over coconut husks; Pesan Telengis Gerang, a delicate package of fresh coconut curd, bean sprouts and perfectly smoked dried whitebait; and Tapé Goreng, a beloved Karangasem dessert of golden-fried fermented cassava.
Complementing this extraordinary culinary experience is a carefully curated selection of Karangasem-inspired beverages. Signature cocktails like Bali Beneath the Trees, an earthy fusion of arak, gula pasir fruit and lemongrass, and the Arsana Negroni, which features a bold infusion of kaffir lime and ginger, embody the depth of the region’s flavours. Temple Bloom pairs traditional brem rice wine with elderflower and citrus for a fragrant aperitif, while the refreshing Sacred Spring mocktail, made with cold-brewed lemongrass, tangerine and ginger flower syrup, pays tribute to the area’s sacred waters.
