The menu begins with an amuse bouche of tuna pizza, combining cheese and tapioca crackers as a light opening bite. This is followed by the appetiser, Ocean’s Salad, which brings together shrimp with caviar, scallop with uni yolk, seared tomato, red radish, yoghurt, and potato. The combination offers a balance of seafood flavours and fresh elements. The soup course features a clear beef consommé with carrot and chives, serving as a clean transition before the main dishes.
For the entrée, guests are served an Angus tenderloin steak accompanied by shimeji, watercress, butter cream, and black pepper sauce. An interlude follows with corn blanc manger, made with Hokkaido corn, truffle kombu, ichimi, and onion chips, providing a brief pause before the final main course.
