There is a certain calm that settles the moment the lift doors open on the 70th floor of Swissôtel The Stamford. At JAAN by Kirk Westaway, the experience begins quietly, guided by space, light, and anticipation rather than spectacle. The restaurant sits above the city, offering a setting that feels considered and composed.
Helmed by Kirk Westaway, JAAN reflects a clear culinary philosophy rooted in British produce and seasonal thinking. Westaway’s menus shift with the calendar, allowing ingredients to lead the conversation. Dishes are clean in structure, generous in flavour, and grounded in familiarity, shaped by modern technique without distancing the diner from what feels recognisable.
The arrival sequence sets the tone. A corridor lined with artworks inspired by Devon landscapes introduces the chef’s background, followed by a welcoming space where a thoughtfully prepared drink marks the transition into the dining room. Inside, the atmosphere opens outward. Floor-to-ceiling windows frame the city and coastline, while a central light installation made from upcycled Murano glass subtly changes with the time of day.
Design details carry through the room. Custom furniture, soft sea-toned banquettes, and organic forms create intimacy within a 35-seat layout. Materials sourced from European textile houses and Balinese wood makers add texture without distraction.
Supported by Head Chef Ng Guo Lun and Sous Chef Wee Beck Joon, the kitchen operates with quiet confidence. At JAAN by Kirk Westaway, the focus remains on honest, seasonal cooking, shaped by memory, season, and a clear sense of place.
