Last February, Arwana restaurant at The Laguna, A Luxury Collection Resort & Spa, Nusa Dua, Bali, hosted its first wine dinner of the year. This time, the luxurious property brought in the Italian brand Talamonti. Founded in 2001 by the Di Tonno family in a pristine part of Abruzzi, southern Italy, Talamonti has expanded greatly since then and produces fine wines much coveted by wine connoisseurs all over the world.
Fortunately for the eager diners attending the Talamonti Wine Dinner at Arwana, they could experience these wines carefully selected by Harald Wiesmann, chief sommelier of The Laguna’s sister property, The St. Regis Bali Resort, meticulously paired with a six-course feast courtesy of The Laguna Resort & Spa’s Executive Chef Made Putra. Both men were present at the dinner to explain about the quality and compatibility of the wine and food. The guest star, Talamonti’s International Sales Manager for Asia Pacific and Middle East Salvatore Campione, also contributed by introducing the history of the winery to the guests.
Some of the highlights of the evening were the miso-gratinated Pacific oysters with pickled seaweed and passion fruit pearls paired with the Trebbiano 2015, the decadent black Angus beef short rib with the Kudos Merlot & Montepulciano d’Abbruzzo 2011, and the unique betutu chicken with Bali black rice risotto, fern tips lawar and foie gras paired with the Moda Montepulciano d’Abbruzzo 2015.
