Chic accommodation Bisma Eight in Ubud has just welcomed Ben McRae as its new executive chef to helm the property’s kitchen, especially for the rooftop restaurant Copper Kitchen & Bar. McRae’s previous experience includes various stints at coveted dining joints all over the world – Iguacu Retaurant in Auckland, New Zealand; Issaya Group in Thailand and Nihiwatu Resort in Sumba, Indonesia, to name a few.
McRae is bringing a fresh breath of air into Copper Kitchen & Bar with his seasonal, earth-to-table concept that only uses locally grown and ethically sourced produce to whip up well-curated and meticulously crafted dishes. Diners can expect ingredients from The Gardens at Bisma Eight, the Tegallalang Reserve and Amed Fisheries, prepared with some Asian influences that result in delectable dishes like the prawn and crab ravioli with dashi shoyu, nori crumb, prawn oil and angel hair seaweed.
