The Apurva Kempinski Bali is set to conclude its year-long Celebration of Culinary Arts with a grand finale that promises an unforgettable culinary experience. This extraordinary event, which has brought together renowned chefs worldwide, will culminate on 15-16 November 2024 with the expertise of Chef Lucas Dumarski, the head pastry chef of the acclaimed two Michelin-starred Mezzaluna in Bangkok. Supported by Valrhona, the event is designed to be a multi-sensory journey through the art of pastry and innovative gastronomy, showcasing culinary mastery at its finest.

Since the beginning of the year, this dining event has celebrated a diverse array of culinary talents, creating a platform for collaboration and creativity. This initiative has brought in Michelin-starred and Meilleur Ouvrier de France (MOF) chefs to work alongside the resort’s skilled culinary team, nurturing an environment where excellence thrives. Over the past months, the resort has hosted esteemed chefs such as Romuald Fassenet, Thierry Drapeau and Mitsuru Konishi, each bringing their unique styles and artistry to Bali’s dining scene.

For the grand finale, Chef Dumarski’s refined pastry creations will be at the forefront, joining forces with Chef Jean-Baptiste Natali, the Executive Chef of Koral restaurant, and Chef Ida Bagus Gede Sujati Arsa, Koral’s Pastry Sous Chef. Together, they will present a curated six-course menu that encapsulates the essence of this year’s celebration. This collaboration promises to merge French finesse with Japanese-inspired elegance, a hallmark of Chef Dumarski’s work at Mezzaluna, where he draws on over a decade of Michelin-starred experience to craft his creations.

Chef Dumarski’s culinary journey has taken him through some of the most renowned kitchens in the world, from Pierre Gagnaire Tokyo to L’Auberge des Glazicks, shaping his innovative approach to pastry. At Mezzaluna, under the guidance of Executive Chef Ryuki Kawasaki, he is known for harmonising diverse flavour profiles, resulting in desserts that both surprise and delight. For this grand finale, the chefs will emphasise locally sourced ingredients, bringing the flavours of Bali to life in each dish, creating a dining experience that tells a story and resonates with The Apurva Kempinski Bali’s commitment to culinary storytelling.

Adding to the celebration, Selasar Deli will host an exclusive Artisanal Afternoon Tea on 15-16 November, where guests can indulge in Chef Dumarski’s signature pastries alongside delicacies crafted by the resort’s own Executive Pastry & Bakery Chef Rizqi and Head Pastry Chef Iqbal. Featuring Valrhona chocolate and a medley of local flavours, this afternoon tea promises to offer a refined selection of desserts that capture the essence of Balinese and international tastes.
