E: Can you share with us your journey into the world of mixology?

A: My journey into mixology began over a decade ago, driven by a passion for creating enjoyable and memorable atmospheres through the art of drinks. Over the years, I’ve delved deep into the world of mixology, exploring the intricate balance of flavours and learning how to craft unique experiences for guests. What truly excites me is the opportunity to experiment with unusual ingredients, especially those that highlight local products, bringing a distinctive touch to every cocktail I create.

E: Mandapa, a Ritz-Carlton Reserve is renowned for its unique and luxurious experience. How do you ensure that your cocktails align with the high standards of the resort?

A: At Mandapa, a Ritz-Carlton Reserve, maintaining high standards is paramount. To align with the resort’s luxurious concept, I focus on creating exclusive cocktails that emphasise local ingredients. This involves incorporating unusual plants, roots, bark and wood to offer an experience that guests can only associate with the resort. We take pride in growing many of our ingredients in our own garden, ensuring freshness and authenticity. Our team adheres to strict preparation standards, ensuring that each cocktail is a masterpiece that embodies the resort’s elegance and exclusivity.

E: What makes the cocktail experience at Ambar Ubud Bar distinct from other high-end bars and lounges?

A: Ambar Ubud Bar stands out due to its unique cocktail concept, which is deeply rooted in Balinese culture. Our cocktails are crafted using local ingredients, including rare plants, native fruits and elements like bark and wood, all of which are related to the rich heritage of Bali. What sets us apart is our medicinally inspired cocktails, each rich with storytelling. 

E: Can you describe the process of developing a signature cocktail for Ambar Ubud Bar?

A: Creating a signature cocktail for Ambar Ubud Bar involves a meticulous process. I start by staying updated with the latest trends in mixology, including new techniques, flavours and customer preferences. However, for Ambar, the cocktails have a distinct character and cultural foundation. Our menu is inspired by the ancient Lontar Taru Pramana concept, which guides us in blending traditional wisdom with modern mixology. This involves experimenting with local ingredients and crafting drinks that not only taste exceptional but also tell a story of Balinese heritage and traditions.

E: Which cocktail, in your opinion, best represents your style, and why?

A: The Negroni is a cocktail that I feel best represents my personal style. It’s a classic drink that is gentle yet complex, embodying a perfect balance of flavours. 

E: What is the most rewarding aspect of your job?

A: The most rewarding aspect of being a head mixologist is the unique blend of creativity and tradition that the role entails. Crafting cocktails that reflect local culture and sharing the stories behind them is incredibly fulfilling. Seeing guests’ reactions to a well-crafted cocktail and knowing that I’ve provided them with a memorable experience is immensely satisfying. Additionally, participating in bar takeovers offers a fantastic opportunity to collaborate with other talented professionals, exchange ideas and experiment with new concepts. These collaborations are not only rewarding but also enhance my skills and broaden my horizons in the world of mixology.
