Akira Back

Akira Back’s restaurant in Jakarta has been a household name in the city’s culinary scene since its debut in 2014, with gourmands unanimously agreeing that Akira Back is one of the best restaurants in the capital city. These accolades are thanks to chef Akira Back himself, who draws on traditional Korean and Japanese culinary references combined with the spirit of freedom that he gained during his time as a professional snowboarder.

This July, the Michelin-starred chef returned to Jakarta and presented five special dishes at his eponymous restaurant. Other than his signature Tuna Pizza, Akira has also prepared outstanding dishes, including whiskey-cured salmon belly with jasmine sauce, slow-roasted bottom sirloin with burnt onion purée and morels, and Nashi Pear, a dessert that consists of vanilla mousse, pear compote and honey ginger caramel. Exquisite Taste sat down with him to talk about his latest creations.

E: Akira Back’s menu is Japanese but with Korean flavours. How different are the two cuisines?
Akira Back: I think the two are very different. Japanese cuisine is about patience and simplicity, while Korean cuisine has intensity, fire and harmony. Two contrasting flavours that I mix with an American twist; that’s Akira Back.

E: What is it like behind the scenes at your restaurant?
A: Just as much a contrast as the food at Akira Back; our kitchen is quiet outside, but intense inside, yet fun. Like a military camp preparing for war.

E: Can you tell me about the Back Is Back set menu?
A: It does not deviate too far from the Akira Back palate. It is full of taste with modern presentation. Food must be attractive and harmonious. For example, the seared foie gras; the duck’s meaty taste goes really well with the freshwater eel, while to make it more fun, caramelised apple is added for a little surprise.

E: With more than 10 restaurants around the world, what are your next plans?
A: If there is an opportunity, I want to design clothes or shoes, or even build a hotel. I feel that with my knowledge off hospitality, F&B and nightlife, I can make this happen.
