As part of the 2017 Ubud Food Festival, Will Meyrick’s acclaimed Mamasan Restaurant and Bar was the venue for one of this year’s most impressive pre festival events – The Guest Chef Series featuring a night of sublime fine dining with the Traditional Flavours of Thailand by Bo.lan.
Founded by two chefs, Duangporn Songvisava (BO) and Dylan Jones (LAN) Bo.lan is one of Bangkok’s foremost Thai restaurants and prides itself on its social responsibility, a theme that blends perfectly with the festival’s own philosophy.
The dinner itself was an explosion of tastes served and enjoyed in the Thai way, communally and with a poetic balance of contrasting flavours and texture.
After enjoying a choice of specially crafted cocktails – The Tamarilo Thai Smash and the Lemongrass Pumpkin Gin Mojito – guests soon moved onto the Bo.lan snacks, the cured and fermented pork pieces of Naem and Sai oua, a traditional spicy sausage served with a crunchy watermelon seed salad.
Served with a choice of Yali wines from Chile, the mains included Kii lek – a lightly grilled beef curry and prawn salad drenched in coconut and palm vinegar dressing before closing off with Bpu Gnut, dumplings with coconut cream and crunchy rice cake.
