Copper Kitchen, Bar & Rooftop at Bisma Eight has long been more than just a dining destination. Nestled in the heart of Ubud, the rooftop restaurant has become a stage for culinary creativity, celebrating seasonality and heritage in every dish.
The restaurant now enters a bold new era as Bisma Eight proudly welcomes Chef Julio “Jo” Petrus as the new Executive Chef of the Bisma Eight Hospitality Group. With over 13 years of experience across Southeast Asia and the Middle East, Chef Jo brings a rich blend of cultural heritage, global influences and modern techniques.
In addition to leading Copper, Chef Jo will also oversee the group’s wider collection of restaurants, including Mori Teppanyaki, Embers Mediterranean, Folk Pool & Gardens and Liap Liap, each known for its distinct flavours and dining experiences.
Originally from North Sumatra, Chef Jo draws from his Batak and Minang roots to craft bold, soulful menus. His previous roles at Hilton Bali Resort, Marriott International and alongside Michelin-trained chefs have shaped his precise yet heartfelt cooking style. Known for attention to flavour, plating and storytelling, his philosophy aligns closely with Bisma Eight’s mission: to honour local ingredients through thoughtful, globally informed cuisine.
