Always at the forefront of meticulously prepared, refined gourmet dining, Chef Maurizio Bombini of MAURI and Chef Don Vito have joined forces to create Bonito Fish Bar, a new dining destination on the island serving fresh seafood inspired by their childhoods.

Situated in the trendy area of Umalas, Bonito Fish Bar is a seafood venue that is quickly getting rave reviews from discerning diners in Bali, who are wowed by the next level gastronomic experience presented by highly experienced chefs Maurizio Bombini and Don Vito.
From the outside, the two-storey restaurant offers a calming earth-tone vibe that invites diners to take a peek behind the glass door. Inside, the open kitchen and long bar offers a convenient place to dine, complete with a glass display showcasing an array of fresh fish and seafood that is 80 percent sustainably caught from local waters. Offering something new and refreshing, the restaurant also provides freshly cut fillets and shellfish from the counter section to be cooked at home.
Open daily for lunch and dinner starting from 1 March, the menu is inspired by the shores of Puglia in South Italy where locals enjoy their seafood raw or cooked. In the raw section, oysters from Lombok or Japan are available to whet the appetite before the main meal. If you’re looking for something grander, try the Bonito Seafood Platter which is perfect for sharing and is filled with oysters, yellowfin tuna, salmon, sea bream, cuttlefish, Hokkaido scallop, mud crab, Japanese prawn and a steamed king prawn. Moving on to the house signatures, the Tuna Tartare is a must-try with yellowfin tuna, salsa tonnata, black olives, capers, radish and fennel.
Not a fan of raw fish? Don’t worry because the restaurant also serves a wide range of cooked dishes, including deep-fried choices such as Jimbaran Crunchy Prawns, Bonito Fish & Chips and Fritto Misto. Want something to fuel up before enjoying the island’s buzzing nightlife? The Rosetta Sandwiches are great. Try the Soft-Shell Crab Tempura with ponzu dressing and pickled papaya, or the Tuna Tartare & Stracciatella which is filled with plenty of yellowfin tuna, lettuce, red onion, eggplant and salsa verde. Not to be missed is the grill section, which consists of barramundi fillet, king prawns, fish skewer and octopus.
No meal is complete without a dessert, and the restaurant’s sweets do not disappoint; the homemade yogurt cheesecake, Valrhona chocolate, gelatos, coppa bonito and sorbets can easily satisfy any sweet tooth.
In addition to the food, Bonito Fish Bar also offers a wide range of drinks to complement the meals. The Bonito Spritz is refreshing with Prosecco, Select Aperitivo, passion fruit and elderflower. For something more classic, try the Limoncello Mule. If you’re in the mood for wine, the restaurant also carries an outstanding list of wines, from red, white, sparkling to rosé.
