Jakarta’s Liu Li Palace Seafood Restaurant at AYANA Midplaza introduces a limited-time menu titled The Art of Flavour: Chef Wong’s Signature Dishes. This seasonal showcase invites diners to explore four carefully selected creations by Chef Wong Chee Hung, each representing his culinary roots, personal evolution and attention to balance.
With over 20 years of experience in fine Chinese cuisine, Chef Wong has honed his skills across top establishments in Asia. His approach blends classic Chinese cooking with a fresh perspective shaped by global exposure. A specialist in Cantonese and Sichuan styles, he has become known for delivering structured, layered and expressive flavours without unnecessary embellishment.
At the core of the special menu are four dishes that speak for themselves. Each is purposefully introduced, offering a different expression of warmth, spice, and comfort. The Liu Li Style boiled live fish soup in a claypot sets the tone. Served with live grouper or lazy fish, the soup is slowly simmered with Chinese herbs to produce a full-bodied and gentle broth. It is a dish that lets the ingredients work naturally, without distraction.
In contrast, the stir-fried lamb loin with pineapple and Lao Gan Ma sauce leans into sharper notes. The lamb is seared quickly to retain tenderness, while the addition of sweet pineapple and the distinctive heat of Lao Gan Ma bring a satisfying edge to the plate. The baked beggar’s chicken offers a different rhythm. Encased in lotus leaves and clay, the chicken is slowly cooked to absorb the aroma of Chinese herbs. Cracking open the clay reveals not just the dish, but its story, which draws from history and celebrates transformation.
The bamboo tube–braised pork knuckle with spicy sauce is closing the selection. This is a rich, full-flavour dish presented in a rustic format. The pork is tender, the sauce bold but balanced, making it hearty and familiar without losing sophistication.
This menu is available for a limited time in Liu Li Palace’s refined space at Midplaza 2. Combining atmosphere and culinary clarity, the experience reflects Chef Wong’s belief that Chinese cuisine can evolve while staying grounded.
