In honour of World Food Day, COMO Uma Canggu came together with MODENA Culinaria to present COMO Journey: Taste of the Land, a two-day celebration of sustainability, innovation, and the art of mindful dining. Held from 16 to 17 October 2025, the programme blends purpose and creativity, exploring how food can inspire both pleasure and progress.
Rooted in COMO’s philosophy of mindful living and MODENA’s passion for innovation, the event features engaging dialogues, live showcases, and a six-course collaborative dinner that pays homage to Bali’s natural abundance.

The celebration begins with the Mystery Box Chef Battle Challenge at COMO Beach Club, where Chef Colin McSherry, Executive Chef of COMO Uma Canggu, faces off against Chef Ami, MODENA Culinaria’s Resident Chef and MasterChef Indonesia Season 10 runner-up. Using reef fish as the mystery ingredient, both chefs will create authentic Balinese dishes with a zero-waste approach, demonstrating how craftsmanship and sustainability go hand in hand.

Later that day, the COMO Conversation: Nourishing Beyond the Kitchen takes place at COMO Penthouse, moderated by Sandra Pramitha of Scholars of Sustenance (SOS). Panellists including Vania Herlambang, Winda Aulia, and Lelie Liana will discuss food security and how cross-industry collaboration can make sustainable nourishment accessible to all.
The event concludes on 17 October with a four-hand dinner titled Taste Without Borders, where Chef Ami and Chef Colin craft a six-course menu that bridges Indonesian heritage with global inspiration. Designed with a zero-waste philosophy and locally sourced ingredients, the elegant dinner celebrates land, sea, and the shared vision of conscious cooking.
