Mozaic Ubud
Thought up by Chef/Owner Chris Salans, the Cucumber & Dill Martini at the legendary Mozaic Ubud is like a reflection of the innovative restaurant itself. Creative, full of deliciousness and inspired by the flavours of the region, this classic cocktail comes with some ingenious Mozaic twists. Being the experimental chef that he is, Chris Salans first makes a purée out of cucumber and dill before setting it into a gelée and delicately portioning it into tiny, jellied cubes. Set in the bottom of the Martini glass, the cubes are then immersed in a shaken vermouth and vodka mix, finished with a garnishing of cucumber canes and a sprig of wispy dill.
