The Peninsula Hong Kong, affectionately known as the Grande Dame, is proud to announce the return of Chef Xavier Boyer, a French culinary maestro whose illustrious career has sparkled with Michelin stars and accolades. Chef Boyer first joined The Peninsula Hong Kong in 2016 as Chef de Cuisine of Gaddi’s, the hotel’s flagship French restaurant. Under his meticulous guidance, Gaddi’s continued its proud tradition of epicurean excellence, earning widespread acclaim from local and international diners alike.
Chef Boyer’s culinary career started in Paris, where he attended Lycée Saint-Joseph du Parchamps and later graduated from the esteemed Ferrandi School of Culinary Arts. His passion and potential led him to an apprenticeship under the legendary Joël Robuchon, a transformative experience that not only honed his technical skills but also provided him with invaluable insights into kitchen management and operations.
Before his return to The Peninsula Hong Kong, Chef Boyer embraced entrepreneurship by founding Papillion Fine Dining in Kaohsiung, Taiwan. There, he combined his extensive experience with a personal touch, further refining his culinary philosophy.
