The Cave by Chef Ryan Clift needs almost no introduction. Since its opening, the restaurant has garnered endless buzz and rave reviews. Nestled within the rugged cliffs of Uluwatu and located in the luxurious confines of The Edge, this culinary gem stands as the first subterranean dining destination on the island, offering diners an unparalleled journey into the depths of flavours and ambience.

 

Set within a natural underground cavern, the restaurant features a contemporary menu by Chef Ryan Clift, executed by Head Chef Tay Chan Yong. To bring memorable dining to its guests, the restaurant is introducing a new bespoke menu using the finest seasonal ingredients.

One of the highlights is the Onion Gruyère Tartlet, a burst of creamy, rich cheese custard served on a bed of chives and caramelised onion in a single bite-sized tartlet. This dish balances umami, acidity, and salinity, topped with a spoonful of luxurious Kaviari Caviar, creating an explosion of flavours that delights the palate.

Another standout is the Red Mullet, also known as goatfish, which is a highly prized fish with a delicate, shellfish-like flavour. In this dish, the fish is oil-confited at a low temperature to maintain its tender texture and is paired with a broth made from its bones, enhancing its natural taste.

STUFFED QUAIL

The Stuffed Quail is a technical yet classic dish where the quail is deboned whole while maintaining its shape and stuffed with a flavorful chicken farce. The meat’s natural sweetness is balanced with chipotle and “dukkah spice,” and the deboned leg is grilled with a house-made spicy glaze, offering a perfect blend of textures and flavours.

For dessert, the “Panna Cotta” offers a playful twist on the classic panna cotta, served both hot and cold. Paired with Bailey’s, coffee, and coconut, it balances flavours of bitterness, chocolate, and nuttiness, providing a delightful end to the meal.
