The next generation of the evolution of fusion doughnut creations debuts in Canggu in the form of Donutccino, the latest innovation by Kawisari Coffee Farm Shop & Eatery.
The first iteration of non-traditional doughnuts came in the 90’s when mochi doughnuts were first invented in Hawaii, before growing in popularity once Japan’s Mister Donut branded it as pon de ringu in 2003. Then, in 2013, all of New York’s foodies and trendiest crowds were flocking to Dominique Ansel bakeries in search of the cronut, arguably the most viral in a long list of the French pastry chef’s whimsical novelties that prompted recreations around the globe. Now, thirteen years later, Kawisari Coffee Farm Shop & Eatery in Canggu is ushering in a new era of fusion doughnuts with the introduction of the Donutccino.
As its name suggests, this curio is a portmanteau of a cinnamon doughnut and a frothy cappuccino, giving the best of both worlds of this widely beloved pair. The golden, fried dough serves as the coffee cup à la a bread bowl, playing into Canggu’s coffee culture that serves as an antithesis to the metropolitan grab-and-go pace. Instead, this serving style invites its enjoyers to sit back, slow down, and savour the moment (on top of the pillowy doughnut rimmed with sugar, of course).
What makes this creation special is the coffee itself, boasting a bold espresso shot courtesy of Kawisari’s own plantation in East Java, one of Indonesia’s oldest coffee estates. Cultivated on volcanic soil, the award-winning beans lend a robust depth and aroma that’s pleasantly earthy, working in tandem with the cinnamon’s woody flavour to offset the doughnut’s sweetness. Billed as a cappuccino one can eat, it offers itself as more than merely a confection to brighten the day, but a playful twist to coffee and doughnuts that leans into and sustains the creative energy of Canggu.
