Elevating Sustainability with Innovative Culinary Vision at Buahan, a Banyan Tree Escape

With a farm-to-table philosophy and a new executive chef, this resort redefines sustainable dining in the heart of Bali.

Buahan, a Banyan Tree Escape, offers a unique experience where nature and luxury harmoniously blend. This adults-only resort features 16 gorgeous villas or bales with “no walls, no doors,” an open-concept layout that lets visitors fully take in the natural surroundings. As part of the Banyan Tree Group, Buahan symbolises the brand’s commitment to sustainability, and this philosophy shines through in its innovative culinary offerings.

At the heart of Buahan’s dining concept is a deep connection to the local community and the land. With 80 percent of ingredients sourced from nearby farmers and producers within an hour’s reach, the resort not only supports the local economy but also significantly reduces its carbon footprint.

Sheandy Satria

Leading the culinary team is Chef Sheandy Satria, a master of Indonesian cuisine with a passion for authenticity. Trained at the prestigious Oberoi Centre of Learning & Development in New Delhi and with experience at The Oberoi Hotel in Bali, Chef Satria has crafted menus for royalty and heads of state, bringing his deep respect for Indonesian flavours to the resort. Under his leadership, guests are invited to experience a deeper connection with Indonesian cuisine, where each plate is crafted with care, creativity and admiration for local ingredients.

Ivan Brehm

In line with Buahan’s commitment to culinary innovation and sustainability, two remarkable chef collaborations are set to take place in October and November 2024. The first collaboration, in October, will feature Chef Yudi from Dapur Bali Mula, a culinary expert dedicated to preserving traditional Balinese cuisine. Chef Yudi’s cooking focuses on ancient recipes and locally sourced ingredients, offering guests a rare opportunity to experience the authentic flavours of Bali’s past.

In November, Buahan will welcome Chef Ivan Brehm of Michelin-starred Nouri in Singapore, known for his groundbreaking “Crossroads Cooking” philosophy. Chef Brehm blends flavours and techniques from various cultures, creating dishes that transcend traditional boundaries. His collaboration with Buahan will bring a global twist to the resort’s culinary offerings, fusing Balinese ingredients with international influences for a dining experience that is both innovative and deeply rooted in Bali’s culinary traditions.
