ENVY at Holiday Inn Resort Baruna Bali kicks off 2026 with the launch of its ENVY Collaboration Series, bringing a new edge to its culinary offerings.
With destinations ranging from rustic grills on the beach to sprawling oceanfront resorts, Bali’s dining scene is as eclectic as ever. ENVY contributes to this with the launch of its latest initiative, ENVY Collaboration Series, which invites talented chefs, food artisans, and innovative minds of the culinary world to bring their own distinctive flair to the shores of Kuta.
The first iteration, Two Chefs, One Table, is slated to take place on 9 January 2026. It welcomes MasterChef Indonesia season six contestant Chef Putu Wahyu Saputra, whose expertise in Indonesian cuisine has taken him to Turkey, serving as an Indonesian Chef Specialist.
Five exclusive creations are set to delight diners for this one-night-only dining experience. It begins with Tuna Sambal Matah Tartlet, which boasts a play of textures from the delicate tuna pieces, crisp aromatics, and the buttery pastry shell. The Indonesian Chicken Spring Roll is a nod to the culture of shared meals, while Ayam Kecap Bao pays homage to the repertoire of street food and Chinese influences that shape the nation’s cuisine.
At the heart of the menu is Salmon Gulai, where pan-seared salmon swims in a fragrant curry that synthesises the robustness of Indonesian spices. The evening ends on a sweet note with Es Doger Cake, which deconstructs the iconic dessert into indulgent layers of coconut sponge, avocado cream, jackfruit, and young coconut, finished with palm sugar glaze and condensed milk essence. This lineup showcases how traditional dishes can be reinterpreted with modern techniques, a reflection of ENVY’s spirit of fusion cuisine.
