Embers Open-Fire Grill makes its debut at Swissôtel Living Jakarta Mega Kuningan, focusing on fire as both a source of flavour and spectacle. The restaurant incorporates the elemental technique of open-flame cooking into a modern dining setting, using heat, smoke and char to shape its unique character.
This concept comes to life through a blend of influences, where Japanese precision meets Indonesian flair, creating contemporary dishes that are deeply rooted in heritage. At the heart of the restaurant, an open kitchen draws attention as chefs work over glowing embers, filling the air with the sound of sizzling meat and the aroma of citrus kissed by flame.
The menu begins with starters that showcase a variety of flavours and texture. The Australian black Angus beef yakitori skewers offer a refined take on street food. In contrast, the tuna tartare, accompanied by citrus and crisp seaweed, provides a refreshing bite. A smoked pumpkin soup with vanilla and Japanese chilli adds comfort with a playful twist, arriving at the table with a swirl of live smoke.
The grill selections form the centrepiece of the dining experience, featuring options such as Tajima wagyu ribeye, tomahawk and slow-cooked brisket. Seafood is equally celebrated, with dishes like barramundi paired with shiso lime and prawn skewers glazed in soy–mirin, served alongside Andaliman sambal.
