E: What are your responsibilities?
A: As the Director of Food & Beverage, I oversee daily operations across all outlets at InterContinental Bali Resort. My role involves elevating service standards, driving revenue growth and designing innovative dining promotions. I work closely with my team to curate exceptional guest experiences, collaborating with other departments and external partners to deliver seamless luxury. A significant focus is on training and development, empowering the team to uphold the resort’s reputation for world-class hospitality.
E: What does a typical day look like for you?
A: No two days are the same, which makes my role exciting. My mornings usually start with a review of operations and touchpoints with my team. The rest of the day is spent strategising—developing new dining concepts, brainstorming menu ideas and collaborating with chefs and managers. Guest interactions are a highlight, as I love listening to feedback and ensuring every experience exceeds expectations. Between meetings, tastings and performance reviews, I mentor my team to ensure service standards remain impeccable.
E: What are your best attributes?
A: I balance creativity with strategic thinking, delivering memorable guest experiences while meeting business goals. I’m passionate about innovation, particularly in crafting unique dining concepts and promotions. As a leader, I emphasise collaboration and empowerment, mentoring my team to achieve excellence. My adaptability helps me thrive in a fast-paced environment, while my attention to detail ensures I maintain
the highest standards.
E: Are you a team player or a team leader?
A: I’m both. As a team player, I excel in collaborative environments, sharing goals and fostering open communication. As a leader, I provide direction, vision and accountability, inspiring my team to perform at their best. Whether working on cross-departmental projects or managing events, I switch seamlessly between roles to achieve success.
E: Who has been the most influential figure in your career?
A: My hotel manager and general manager at InterContinental Bali Resort have had the greatest influence on my career. They’ve allowed me to be authentic while encouraging me to align my individuality with the resort’s broader vision. Their mentorship has inspired me to think creatively, foster a culture of growth and deliver exceptional guest experiences.
E: What is one truly special thing about your hotel’s culinary offerings?
A: Our culinary offerings are built on a foundation of innovation and creativity. We’re encouraged to reimagine and push boundaries, crafting dining experiences that reflect the resort’s unique essence while setting new standards for excellence. This forward-thinking approach, paired with collaboration, makes our offerings truly exceptional.
E: What is the most important trait to have in your work?
A: Adaptability is essential in the constantly evolving food and beverage industry. It enables me to navigate shifting guest expectations, embrace innovation and tackle challenges effectively. Being adaptable ensures smooth operations and exceptional guest experiences, while also helping me lead with resilience and inspire my team to thrive.
E: How do you unwind?
A: I unwind by spending quality time with my daughter, which reminds me of what truly matters. I also enjoy golfing and participating in triathlons, as they challenge me both physically and mentally. These activities help me recharge and stay energised for the demands of my work.
E: Dead or alive, who would you take out to dinner?
A: I’d take my wife to dinner. She’s been my greatest supporter and inspiration, and sharing a special evening would be the perfect way to reconnect and express my gratitude.
