Indian food is all about the rich heritage of flavours, spices and aromas that capture the country’s true taste. Further enhancing the Indian flavour experience for Indonesian foodies, Keraton at the Plaza, a Luxury Collection Hotel, Jakarta delivered a taste of India to its stylish cafe La Moda, featuring Chef Amninder Sandhu, a culinary star from Mumbai, in August.
Amninder is currently executive chef at Arth, a fine dining establishment in Mumbai that aims to introduce diners to the oldest methods of Indian cooking. The gas-free concept followed here is much talked about, embracing the conventional Indian approach of slow cooking over wood fire and charcoal. Amninder also battled on Netflix’s famous culinary challenge show, The Final Table, being the only Indian chef among the 23 other elite chefs from across the world. A culinary maestro, she won the national award for Best Lady Chef presented by the Ministry of Tourism.
During the five-day event, Amninder combined the unique aroma of spices with the sumptuous flavours of seasonal ingredients and traditional culinary techniques to create a delectable selection of Indian favourites. In her line-up of dishes, Amninder highlighted Kovalam lobster taco with coconut, coriander masala and South Indian bread uttapam. Guests also discovered her signature dish, paneer kofta, as cooked on Netflix’s The Final Table, and finally, the raan biryani with slow-cooked goat leg, basmati rice and saffron, for a homey Indian taste.
