Hospitality and agrotourism management group Nyanyi Bali paves the way for culinary excellence with KŌRO, a brand-new beachfront restaurant on Nyanyi Beach.
Tabanan is an area often untouched by tourists, making it a well-kept secret among locals and novelty explorers. Even so, the region thrives with an equal amount of creativity and radiant cultural energy as more popular destinations. Nyanyi Bali Group enriches this further with KŌRO, founded by Made Ariani Siswanto and Chef Eric Cocollos. This restaurant serves as an extension of Bali Culinary Pastry School (BCPS), which had its soft launch on 21 November 2025.
Building off the Japanese term koku, the culinary harmony that emphasises depth, richness, and balance of flavours, food becomes a special sensory experience. The menu enriches modern gastronomy with cultural influences of Bali, Japan, and Italy. This distinctive blend is reflected in each of the chef’s creations that resemble meticulous art pieces, prepared with the finest local ingredients that adheres to their farm to table to farm initiative.
The koku outlook is extended beyond what’s on the plate, integrated also into the ambience of its amicable space, situated along the shores of Nyanyi Beach within a serene tropical garden. It sets the stage for the craftsmanship and artistry of a new generation of professionals who trained at BCPS.
“Our savoir-faire defines the mission and philosophy we live each day, nurturing future professionals from Indonesia who build a living, end-to-end ecosystem of culinary excellence,” shared Chef Eric, fulfilling Nyanyi Bali’s promise to promote the island’s soulful hospitality spirit.
Following this soft launch, diners can look forward to a lineup of exciting offerings from KŌRO as it introduces seasonal menus, curated events, and exclusive experiences throughout 2026.
“Bali stands as a serene expression of savoir-être; a place where exploration never ends,” the chef added, paving the way for the restaurant’s future endeavours.
