E: Can you share with us what first ignited your passion for mixology and how you decided to pursue it as a career?

A: I started working in hospitality at the age of 15, and, honestly, I have never looked back. My career has taken me all over the world, unlocking some truly amazing experiences. From trekking through the Amazon in search of unique botanicals, to starring in a short film alongside Ana de Armas, my journey in mixology has been nothing short of extraordinary.

E: As an award-winning mixologist, you’ve undoubtedly crafted many memorable cocktails. Can you tell us about one of your favourite signature cocktails and the inspiration behind it?

A: One of my favourite cocktails on the menu at SCHOFIELD’S BAR right now is our Martini. We collaborated with Asterley Bros. to create our own dry vermouth, giving us complete control over the flavour profile from the base ingredients. This collaboration has resulted in a wonderfully balanced cocktail that embodies the essence of our bar.

E: You’ve worked in some of the world’s top barsacross various countries. How have these diverse experiences influenced your approach to bartending and cocktail creation?

A: My experiences in different bars across the globe have profoundly influenced my approach to mixology. I am always keen to explore new flavours and find innovative ways to incorporate them into my drinks. Each country and bar has its own unique spirit and ingredients, and blending these diverse influences has been a key aspect of my cocktail creation process.

E: The cocktail industry is continuously evolving. How do you stay ahead of trends, and what’s your process for experimenting with new ingredients and techniques?

A: We are true believers in classic cocktails and timeless style. Instead of chasing trends, we focus on refining and perfecting the classics. This approach ensures that our cocktails remain elegant and enduring, appealing to a wide range of palates. Experimentation comes naturally through this process, as we continually seek to enhance traditional recipes with subtle innovations.

E: SCHOFIELD’S BAR has quickly become a celebrated venue. What was your vision for the bar when you first conceptualised it, and how has it evolved since its opening?

A: My brother Daniel and I always envisioned creating a classic-style venue. Over 10 years, we fine-tuned our ideas and brought them to life with SCHOFIELD’S BAR. However, it has always stayed true to our original vision of creating a classic cocktail bar.

E: You’ve received numerous accolades throughout your career. Which award or recognition has been the most meaningful to you, and why?

A: The recent recognition of SCHOFIELD’S BAR as the best bar in the UK for three consecutive years has been incredibly meaningful. This accolade is a testament to the hard work and commitment of our entire team.

E: After a long day, what’s your go-to drink to unwind, and why?

A: Always a Guinness! It holds a special place in my heart.
