On 19 February 2026, KONG Bali presents a one-night-only avant-première in collaboration with Sensei Ikan. As an upcoming culinary concept slated to open at Cocana Resort Gili Trawangan, this exclusive evening offers an early glimpse into the forthcoming restaurant’s menu through a strictly limited six-course tasting experience.

Famous for its confident dishes and ahead-of-the-curve metropolitan energy, KONG Bali is a contemporary bistro that presents the best of late-running dining culture. With this one-night only intimate preview, the evening promises a night of masterful culinary expertise and daring flavours, designed for those drawn to innovation and refined Japanese-inspired culinary expressions. 

Leading the charge to this new culinary frontier is  Executive Chef Phil Mowforth of The Guest Society. His 18-year global culinary experience shapes the menu’s refined direction. Joining him is Chef Nick Escobar, formerly of Nobu Fifty-Seven New York, contributing three signature courses that reflect his distinctive culinary voice.

The progression is anchored by a selection of dishes that showcase the collaboration’s expressive range, from delicacy to depth. Highlights include red snapper crudo with its clean, precise brightness, richly caramelised truffle-glazed beef yakitori, and a refined slipper lobster dumpling layered with subtle sweetness and texture. Grilled barramundi rounds out the savoury arc, bringing gentle smokiness and balance. 

The experience is further elevated by thoughtfully crafted drinks, from the Norihana (blending light rum with kaffir lime, furikake, wasabi, and sesame oil) to the Sensei Ikan Mojito (a deeper, citrus-lifted mix of dark rum, shikuwasa-koi, lemon, yuzu, and mint). A curated sake selection by the glass, including Niida Honke Junmai Genshu, Hakutsuru Junmai Daiginjo, and Ozeki Josen Kinkan, completing the evening with a refined balance of intimacy and immersion.
