Food & Beverage Manager at the Alaya Resort Ubud

E : Describe your typical day in a sentence.

Krisna: I like to see everything organized … I believe in doing things today and not just waiting to see how things go. So my typical day is built on this philosophy, I plan, I organise, I execute.

E : Sounds exciting – so how did you come to be the F&B Manager at Alaya Resort Ubud?

Krisna: As so often, it’s about being in the right place at the right time and, backed by 20 years’ experience, I was fortunate enough to be there when the position arose. Since my appointment, I’ve helped reshape the food and beverage department and am very proud of what we have achieved here, especially at our increasingly popular Petani restaurant.

E : What’s the toughest part of your job?

Krisna: The toughest part is maintaining the balance between two different worlds. On one hand, looking after guest demands regarding our products / menus and service is paramount, while on the other, so is the welfare of my staff.

E : And the most rewarding part?

Krisna: When both our guests and staff are happy.

E : At work, what makes you smile?

Krisna: Happy guests and happy staff make my day!

E : And what motivates you?

Krisna: Firstly, constructive comments and guest observations push us to improve all the time, meaning we always try to personalize and improve the Alaya experience. Secondly, my competitors!

E : Would things fall apart if you weren’t around?

Krisna: Maybe, maybe not. I actually believe that nothing would change because my staff are used to working independently and have hopefully been well trained by me.

E : Who, in your team, deserves more recognition and why?

Krisna: No one specifically because they all work as a team that deserves praise and recognition.

E : Why should people choose Petani to dine?

Krisna: The venue is easily accessible for everyone; it is airy and spacious, has a large and varied menu and offers live music every night.

E : Away from work, what’s your favourite place to eat?

Krisna: Babi guling Ibu Oka… as a Balinese, where else

would I eat?

E : How do you unwind?

Krisna: I love biking, so I relax by riding one of my motorbikes.

E : Finally, any advice for those looking to break into the industry?

Krisna: Make sure you have something special to offer and are prepared to push yourself to the limits all the time.
