A Chile native whose 18 years of international experience span luxury hotels and acclaimed restaurants, including Sheraton Miramar in Chile and Grand Hyatt Jeju in South Korea. His deep-rooted passion for South American cuisine and live-fire cooking has led him to 25hours Hotel Jakarta The Oddbird, where he has refined his craft into a seamless blend of seasoned expertise and fine-dining precision.

 

E: How did your journey in the culinary world begin?

A: My culinary journey began in a family-run restaurant, where I learned the fundamentals of cooking and hospitality from a young age. That foundation led me to pursue an International Culinary Degree in Chile and eventually build a career across luxury hotels and restaurants in different countries.

E: Looking back on that journey, who or what has shaped you the most?

A: Working in international kitchens and multicultural teams has shaped me the most. Each experience, from hotel pre-openings to standalone restaurants, reinforced the importance of adaptability, strong leadership, and respect for culinary heritage.

E: How would you describe your cooking style today, and how has it evolved?

A: My cooking style today is deeply inspired by South American cuisine, with a strong focus on wood-fire and charcoal grilling. Over time, my approach has become more refined and ingredient-driven, allowing fire, smoke, and natural flavours to lead.

E: Where do you typically draw inspiration when developing new dishes or concepts?

A: I find inspiration in South America’s culinary traditions, local markets, seasonal ingredients, and travel. Fire-based cooking is central to my identity as a chef, and I enjoy translating those traditions into modern dishes that resonate globally.

E: Based on your experience, what qualities define a truly great chef?

A: A great chef is a leader, mentor, and team builder. Consistency, humility, attention to detail, and the ability to guide a team toward a shared vision are just as important as technical skill.

E: Turning to your current role, how would you define COPA Jakarta in your own words?

A: COPA is the vibrant culinary heart of 25hours Hotel Jakarta The Oddbird, celebrating Latin American flavours brought to life through fire, smoke, and bold seasoning. At its core is a wood-fired charcoal grill, where meats, seafood, and vegetables are prepared with care and precision.

E: Beyond the flavours of Latin America, what makes COPA’s offerings distinctive to you?

A: Beyond the food, COPA is about atmosphere and connection. Communal tables, an open kitchen, and lively interiors inspired by Latin culture create a social dining experience. Guests are encouraged to share dishes such as empanadas, citrus-driven ceviche, and asado paired with homemade sauces, making every meal dynamic and interactive.

E: Since joining 25hours Hotel Jakarta The Oddbird, how have you observed the local culinary scene evolve, and what challenges does Jakarta present?

A: Jakarta’s culinary scene is evolving rapidly, with diners increasingly curious and open to global flavours. The challenge is maintaining authenticity while adapting to local preferences, and COPA embraces this by offering a concept rooted in tradition while remaining energetic and approachable.


Guacamole with Corn Tortillas

Ingredients:

  • Guacamole
  • 2 ripe Hass avocados
  • 1 beef tomato, finely diced
  • ¼ red onion, finely chopped
  • Fresh coriander, chopped
  • ½ habanero, finely chopped
  • 3-4 dashes Tabasco
  • Juice of 1 lime
  • Salt, to taste
  • Black pepper, to taste

To Serve:

  • Warm corn tortillas

Method:

  1. In a mortar, lightly crush the red onion and habanero to release their natural oils and aroma.
  2. Add the avocado and gently mash, keeping a slightly chunky texture.
  3. Fold in the diced beef tomato.
  4. Season with lime juice, Tabasco, salt, and black pepper.
  5. Add the coriander and mix carefully to combine without overworking the avocado.
  6. Taste and adjust seasoning as needed.
  7. Serve immediately with warm corn tortillas.
