As the new Director of Food and Beverage, Michel Eschmann brings passion, precision and leadership to Jimbaran’s most exclusive address. With a career spanning prestigious five-star establishments worldwide and an Olympic gold medal in culinary mastery, he sets a new standard for excellence.

Michel’s culinary journey began in Switzerland, where he first ignited his passion for fine dining while apprenticing at a family friend’s restaurant. Fuelled by creativity and a quest for perfection, he underwent rigorous training through various apprenticeships, culinary schools and Master Chef programmes. This hard work earned him numerous accolades, establishing him as one of the world’s top culinary talents. His pinnacle achievement came in 2004, when he became an Olympic Champion at the IKA Erfurt Culinary Olympics, winning three gold medals as part of the Swiss national team.

Michel’s illustrious career has taken him across the globe, holding leadership roles at five-star establishments in China, Thailand, Malaysia, Korea and Japan. In 2022, while at The St. Regis Osaka, he transitioned from the position of executive chef to director of food and beverage, broadening his influence beyond the kitchen into hospitality leadership and guest experience.

At Four Seasons Resort Bali at Jimbaran Bay, Michel brings not only technical expertise but also a leadership philosophy based on empowerment and mindfulness. He aims to inspire confidence in his team members and help them reach their full potential. His approach is influenced by his training in non-violent communication, the science of happiness and Vipassana meditation—principles that allow him to maintain balance in the fast-paced culinary industry.

Under Michel’s leadership, Four Seasons Resort Bali at Jimbaran Bay will continue to offer exceptional dining experiences rooted in Balinese heritage. The award-winning Sundara features bold flavours inspired by Jimbaran’s seafood barbecue culture, while Taman Wantilan boasts interactive live stations serving both Asian and western cuisine. Jala specialises in authentic Balinese dishes and offers hands-on culinary experiences at the Jala Cooking Academy. For innovative cocktails, TELU operates a zero-waste bar concept that supports local charities. Health-conscious guests will also enjoy a thoughtfully crafted menu at Alu, the resort’s poolside café, developed in partnership with nutritionist Miles Price.
