The restaurant prides itself on its range of high-quality grilled meats and seafood. Never a place that rests upon its reputation, not only does the menu evolve with the seasons, DAVA also hosts special dinners and guest chefs, the most recently being the Michelin-starred and celebrated Italian restaurateur-chef Beppe De Vito, who presented a carefully selected collection of progressive and personal Italian dishes from the menu of his award-winning Singaporean restaurant Braci between the 2nd and 5th August 2018.
Backed by a delightful assortment of wines, guests could indulge in the full degustation menu or chose à la carte from dishes like charred organic cauliflower served with rich burrata, hazelnut and sumac, tagliolini pasta with sea urchin and caviar and mains like black cod served with onions, tomatoes and fermented pumpkin seeds. For the meat and dessert lover there was Miyazaki wagyu and aged duck complemented by beetroot, confit potatoes and five peppers jus and a choice of moreish Italian desserts to finish.
