More than a restaurant, di Mare reflects Italian culinary heritage infused with Balinese spirit, brought to life through personal touches, engaging storytelling and one of the island’s most stunning views.
With a capacity of just 50 seats, the ambience is intimate and elegantly designed. The recent refresh draws inspiration from the Amalfi Coast, featuring natural wood furnishings, blue-and-white accents, flowing linen chandeliers and hand-laid aquatic tiles. This design creates a light, open environment that enhances the breathtaking backdrop of the Indian Ocean and the warm glow of Bali sunsets, setting the stage for a unique dining experience.
At the helm is Chef Stefan Thietz, who grew up along the Cape Town coast, fostering an appreciation for seafood, simplicity and open-flame cooking. As resort chef de cuisine, he collaborates with Group Executive Chef Joseph Antonishek to present a new Signature Menu that honours classic Italian recipes while incorporating fresh perspectives and regional influences.
The menu focuses on flavour, featuring house-made pastas, creamy risottos and wood-fired pizzas that balance authenticity with innovation. Notable items from the Chef’s Weekly Inspirations include ancient Roman seabass with garum and lovage, a rustic Bolognese that captures the essence of the Italian countryside and comforting Campanian dishes such as crispy chicken thighs over soft polenta.
