Celebrated Northern Irish chef Colin McSherry brings global flair and fresh vision to the resort’s beachfront dining scene.
COMO Uma Canggu marks a new era of gastronomy with the appointment of Colin McSherry as Executive Chef. With more than two decades of experience in Michelin-starred kitchens, McSherry steps into the role with a bold yet refined culinary philosophy, ready to elevate the resort’s dining experiences along Bali’s shores.
A Belfast native, McSherry began his journey under some of Britain’s most influential chefs. At The Fat Duck, he learned the art of storytelling through food under Heston Blumenthal, while his time with Angela Hartnett refined his mastery of flavour and simplicity. His impressive career has included senior roles at Dinner by Heston, The Clove Club, and Nuala London, where he was both Head Chef and shareholder.
After gaining national attention on The Great British Menu, McSherry joined COMO Metropolitan London as Head Chef, leading a 40-strong team and curating vibrant, seasonal menus. His most recent chapter took him to sea as Galley Manager, designing daily menus and managing kitchens across global voyages, a journey that deepened his creativity and adaptability.
Returning to COMO, now in Bali, McSherry embraces the island’s extraordinary produce and culture. “Food is a universal language,” he says. “Here, I’m inspired to create dishes that connect people with place, tradition, and innovation.”
