New Tables Bali: KŌRO Bali

ABURI & KATSU SALMON, IKURA TARTLET, GINGER LEMON WATER, DAIKON & SATOIMO

hough often overlooked, Tabanan is an area thriving with as much creativity and culture as other landscapes in Bali, complete with a growing culinary scene. Further enriching the coastal landscape is KŌRO Bali, an oceanfront dining destination located along the shores of Nyanyi Beach. Founded by Made Ariani Siswanto and Chef Eric Cocollos, the restaurant is part of Nyanyi Bali, functioning as a living classroom for Bali Culinary Pastry School (BCPS) where foundational skills are developed into real-world culinary practice within a professional dining environment.

The culinary experience is guided by nature’s best offers and the Japanese philosophy of koku, a science that explores the depth, complexity, and richness of food. The menu is built through influences of Balinese, Japanese, and Italian cuisine, designed to bring complexity and emotional impact. Behind each dish is an eco-conscious thought, incorporating practices that champion sustainability through zero-waste initiatives, waste sorting, and table-to-farm composting.

The koku philosophy is extended beyond what’s on the plate, also integrated into the ambience of its amicable space. Whether for lunch, sunset specials, or dinners, each moment carries its own rhythm and atmosphere, brought together by ocean views, modern gastronomy, and thoughtful hospitality for a seamless noon-to-night destination.
